🏅 Crusader Kings 3 Graphics Settings

When you uninstall a Paradox game, it doesn't get rid of the documents folder it creates (which contains settings, saves, etc.) that's separate from the game files. Go to your Documents folder and then Paradox Interactive\Crusader Kings III, and delete the pdx_settings.txt file. When you start the game again, it will recreate the file with I'm playing with the highest settings, but the character faces look melted. My MBP has the same Vega 20 that's apparently available on the 4K Intel iMac, and the game runs really well with that, but I don't know how that compares with the M1 GPU.

I couldn't attest because I play on a 1080 Ti at 4k res, but I don't run anywhere near 100% GPU. Sounds like either a firmware issue with the newer drivers, or an optimization bug on Paradox's end.
